Chicken breast in ham with mustard crust from the oven

Ingredients for 2 servings:

  • 2 slice(s) ham, air-dried
  • 2 chicken breasts
  • 1 sprig(s) rosemary needles, chopped
  • some sage leaves, chopped
  • 1 sprig(s) thyme leaves, chopped
  • 3 sprig(s) oregano leaves, chopped
  • 1 clove(s) garlic
  • 2 tbsp Dijon mustard, grainy
  • 2 shots of olive oil
  • 3 tomatoes
  • 4 mushrooms
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Place the ham slices on a board, top with the chopped herbs and sliced ​​garlic. Place the chicken breasts on top. Fold up the overlapping ham. Brush the meat with the grainy mustard. Place the parcels in a greased baking dish. Wash, peel, and dice the tomatoes. Clean and quarter the mushrooms. Place both vegetables around the chicken breasts in the dish, season with salt and pepper. Pour in the remaining olive oil. Roast in a preheated oven at 160°C (320°F) for 25 to 30 minutes. The time depends on the size of the chicken breasts. Serve with a crusty baguette and a fresh salad.
