Ingredients for 2 servings:

  • 1 pumpkin(s) (microwave pumpkin)
  • optionally diced tomatoes
  • ½ pack of feta cheese
  • 250 g leaf spinach (frozen)
  • salt and pepper
  • rosemary

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Microwaved pumpkin with spinach and feta cheese

First, thaw the spinach in a pan on the stovetop and heat until hot. Add tomato pieces as desired and season the mixture. Wash the microwave pumpkin. Cut off the top. Scoop out the pumpkin with a spoon and remove all seeds and strings. Fill the pumpkin with the spinach and feta cheese, alternating layers of cheese and spinach. Finally, put the lid on and place the pumpkin on a microwave-safe plate. Microwave the pumpkin at 1000 W for about 7 minutes. Tip: A delicious tarte flambée goes well with the pumpkin. If you like, you can also fill the pumpkin with minced meat.
