Ingredients for 2 servings:
- 1 large butternut squash
- 200 g feta cheese
- n. B. spice(s)
- n. B. herbs
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cut the butternut squash in half and remove the core and fibers. Place the squash halves cut-side down on a plate and microwave on full power for about 10-15 minutes. If it gives slightly when pressed, it’s done. While the squash is cooking, crumble the feta cheese (I like to use the one with 9% fat) into a bowl and season to your liking. You can and should be very creative. I like to use pepper, parsley, salad herbs, onion, cumin, coriander, marjoram, and ginger. Salt isn’t necessary because of the feta. Remove the squash halves and turn them over. Spread the seasoned feta on top and then immediately scoop out the halves! Tip: If I’m eating alone, I cover the other half of the squash and put the half package of feta in the fridge, also tightly closed. Then you can easily make this delicious dish again up to 3 days later.
