Ham and leek in puff pastry

Ingredients for 8 servings:

  • 600 g puff pastry
  • 4 stalk(s) leeks (thick stalks)
  • ½ liter of water
  • 8 slices of cooked ham
  • 8 slices of Gouda
  • 2 eggs, separated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Thaw the puff pastry. Trim the leek and cut it into 8 equal pieces. Bring water with salt to a boil. Cook the leek in it for 10 minutes, drain, and let cool. Wrap one slice each of ham and Gouda cheese around a piece of leek and place it on the puff pastry. Brush egg white along the edges of the puff pastry and press down firmly. Place on a baking sheet rinsed with cold water. Whisk the egg yolk and brush it over the puff pastry pieces. Let it rest for 15 minutes. Bake in a preheated oven at 200°C (top/bottom heat) on the middle rack for approximately 20-30 minutes. To serve: Place the ham and leek in the puff pastry on plates and serve with salad. Tip: A spicy sauce, such as spicy cucumber cream, goes very well with this dish.
