Black Angus in sage butter

Ingredients for 1 servings:

  • 400 g beef fillet(s) (Black Angus)
  • 20 sage leaves
  • 1 tbsp clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 80°C (top/bottom heat) using a shallow dish. Heat clarified butter in a heavy-based pan and deep-fry 2/3 of the sage leaves. Remove the leaves. Brown the meat in the fat until lightly browned. Place the meat, along with all the leaves and fat, in the dish and cook for about 25 minutes (medium/rare). Carve and serve with the leaves.
