Coleslaw with dried plums

Ingredients for 4 servings:

  • 1 small white cabbage
  • ½ tsp fennel seeds
  • 3 tbsp sesame oil, dark
  • 2 tbsp maple syrup
  • 2 tsp chili paste, fermented
  • 10 plum(s), dried
  • 1 tsp, heaped salt
  • 1 tsp pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Cut the plums into small pieces. Grate the cabbage, season with salt, and then knead thoroughly. Let the cabbage rest for an hour. Add all ingredients to the cabbage and mix well. It’s best to refrigerate overnight.
