Apple and Onion Quiche

Ingredients for 1 servings:

  • 200 g flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 100 g quark
  • 4 tbsp milk
  • 4 tbsp oil
  • 150 g bacon, streaky
  • 400 g onion(s)
  • 1 tbsp butter
  • 3 apples, sour
  • 200 ml sour cream
  • 4 tbsp crème fraîche
  • 3 eggs
  • 80 g cheese (Emmental), grated
  • salt and pepper
  • Fat for the mold
  • 50 g walnuts, chopped
  • 1 tbsp chives, chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mix the flour with the salt and baking powder. Add the quark, milk and oil. Knead the ingredients briefly with a hand mixer fitted with a dough hook on the lowest speed, then on the highest speed. Chill the dough for about 20 minutes. Meanwhile, cut the bacon into strips. Peel the onions and slice them into thin rings. Fry the bacon in a pan without fat and then remove from the pan. Melt the butter and sauté the onion rings for a few minutes. Peel and quarter the apples and remove the cores. Cut them into thin slices and mix with the onions, sour cream, crème fraîche, eggs, cheese, salt and pepper. Roll out the dough and place it in a greased springform pan or quiche dish with a diameter of about 26 cm, forming a 2 cm high rim. Pour the filling onto the dough and spread the bacon on top. Sprinkle with chopped walnuts. Bake on the lowest rack of the oven at 180 degrees Celsius for about 40 minutes. Sprinkle with chives before serving.
