Ingredients for 6 servings:
- 750 g minced meat, mixed
- 1 bunch of spring onions
- 1 bunch of parsley
- 3 cloves garlic
- 100 g Parmesan, freshly grated
- 40 g dried tomatoes
- 180 ml carbonated mineral water
- 2 tbsp, heaped Dijon mustard
- 1 tbsp, heaped paprika powder, sweet
- 1 tbsp, leveled baking soda
- 1 tsp, heaped white pepper, ground
- 1 tsp, leveled allspice powder
- 1 tsp, heaped smoked salt
- n. B. Salt
- 200 g potatoes, waxy
- 250 g green beans
- 200 g bacon, sliced
- some fat for the mold
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 35 minutes
Wash and peel the potatoes and cut into 1.5 x 1.5 cm strips. Wash the beans and trim the ends. Simmer both in salted water for 10 minutes. Then remove with a slotted spoon and set aside to steam. For the meat dough, clean and finely chop the spring onions and garlic. Wash the parsley, shake dry, remove the stalks and chop finely. Finely dice the sun-dried tomatoes. Place in a bowl with the minced meat and the remaining dough ingredients and knead with a dough mixer for about 10 minutes. Season with salt again if necessary. Line a 20 cm (8 inch) loaf pan with the bacon slices, so that half of the slices hang over the edge. Pour in a quarter of the dough, press down, and cover lengthwise with half of the potato sticks. Pour in the next quarter of dough and press down. Make a small well and distribute the beans in it. Fill the next quarter of the dough on top, press down, and top lengthwise with the remaining potato sticks. Pour the remaining dough into the dish, press down, and cover with the overhanging bacon. Insert a meat thermometer into the center of the roast. Preheat the oven to 90°C (top/bottom heat), place the meatloaf on the middle rack, and roast for 30 minutes. Then increase the temperature to 150°C (300°F) and continue roasting until an internal temperature of 75°C is reached. The total roasting time is approximately 2 hours. The meatloaf can be served with any kind of vegetables or with potato or pasta salad.
