Buffalo mozzarella skewers

Ingredients for 4 servings:

  • 2 tomatoes, an elongated variety
  • 1 small zucchini, green or yellow
  • 7 slices of bacon
  • 8 large basil leaves
  • 8 balls of buffalo mozzarella (mini balls)
  • n. B. Balsamic cream
  • n. B. Fleur de Sel (Flor de Sal)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

as a barbecue side dish or also suitable for a buffet

Cut the tomatoes and zucchini into slightly thicker slices. Halve the mozzarella, if desired. Fry the bacon until crispy and drain on kitchen paper. Arrange the tomatoes on a plate and sprinkle with salt. Place the zucchini on top, followed by the mozzarella. Add a basil leaf and place one or half a slice of bacon on top. Secure with a wooden skewer, drizzle with balsamic vinegar, and you’re done. This is wonderful to prepare in advance. The zucchini isn’t fried, and the skewers still taste great two hours later. It’s also great on a buffet, but also works well as a small appetizer.
