Salmon with Mediterranean vegetables

Ingredients for 2 servings:

  • 2 wild salmon fillets
  • 2 small zucchini
  • 2 bell peppers, red and yellow
  • 3 large tomatoes
  • 1 clove(s) garlic
  • 2 sprigs rosemary
  • 2 sage leaves
  • 2 sprigs of oregano
  • 3 tbsp olive oil
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the vegetables. Slice the zucchini and cut the peppers and tomatoes into chunks. Finely chop the garlic. Heat a large pan, add the olive oil, and briefly sauté the garlic, then add the zucchini and peppers. After 2 minutes, add the tomatoes and herbs whole and season with salt and pepper to taste. Wash the fish, season with salt and pepper, and place it on top of the vegetables. Cover and simmer on medium heat for about 8 minutes. Serve in deep pasta dishes with ciabatta and a chilled white wine.
