Asparagus with cold spinach and yogurt sauce

Ingredients for 4 servings:

  • 1 kg asparagus, ready to cook
  • 500 g spinach, fresh
  • 1 onion(s)
  • Garlic clove(s)
  • 1 cup of natural yogurt, cream level
  • salt and pepper
  • Sugar
  • butter

Instructions

Cook the asparagus in salted water with a knob of butter and a pinch of sugar. Meanwhile, trim the spinach, remove the stalks, and wash it. Blanch it in boiling water, then rinse in cold water and drain. Finely dice the onion and garlic clove and stir into the yogurt. Squeeze the cooled spinach well and finely chop. Add it to the yogurt and season to taste. Arrange the asparagus on a plate and top with the sauce. Serve with baguette.
