Soup: Healthy Coconut Turmeric Broth

  • 2 tsp Coconut oil
  • 2 Pc. Onion
  • 1 tsp Black mustard seeds
  • 1 tbsp Ginger, grated
  • 400 ml Light coconut milk or unsweetened coconut milk drink
  • 200 ml Water
  • 1 tsp Turmeric
  • 0,5 tsp Sea-Salt
  • 1 pinch Black pepper
  • 1 pinch Cayenne pepper
  • 1 tsp Vegetable broth powder
  • 1 Splash Lemon juice
  1. Melt the oil in a saucepan over medium heat. Sauté chopped onions in it for a few minutes. Add ginger and mustard seeds and fry briefly. Then add coconut milk and water. Add the remaining ingredients and simmer for a few minutes with the lid on and at medium temperature.
  2. Then puree finely and, if necessary, pass through a sieve. I like to drink or spoon the broth when I need an energy boost. If you like, you can also add more cayenne pepper.
