juicy, fruity, for a square springform pan of 35 x 24 cm
Melt the butter. This works well in the microwave if you use a medium setting. Meanwhile, chop the marzipan very finely, or better yet, grate it. Mix the butter, marzipan, and sugar well. Beat in the eggs one at a time. Add the bitter almond flavoring. Stir until a smooth mixture forms. Mix the flour, starch, and baking powder together, then add to the marzipan, butter, and sugar mixture in two portions and stir in. Peel three apples, cut them into small pieces, and immediately add them to the batter and fold them in. By chopping the apples now and adding them immediately, you don’t have to add lemon juice. If you prepare the apples in advance, you should add a few drops of lemon juice to prevent them from browning. Pour the batter into the greased dish and smooth it down. Preheat the oven to 170°C (top/bottom heat) or 150°C (fan). Peel the remaining apples, cut them into wedges or eighths, distribute them evenly over the dough, and gently press them down. Bake in the preheated oven for about one hour. If the cake gets too dark, cover with aluminum foil if necessary. After cooling, the cake can be garnished with apricots or dusted with powdered sugar, but this is not necessary. Note: The recipe is for a rectangular springform pan measuring 34 x 24 cm. For a round springform pan with a diameter of 28 cm, use two-thirds of the quantities.
