Meatloaf with feta and tomatoes

Ingredients for 4 servings:

  • 750 g minced meat, mixed
  • 3 rolls
  • 3 eggs, size M
  • Herbs, mixed
  • 1 clove(s) garlic
  • 1 large onion(s)
  • some salt and pepper
  • Paprika powder
  • 4 large tomatoes
  • 1 package feta cheese, in brine

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 40 minutes

First, soak the bread rolls in water. Dice the onion, press the garlic into a mixing bowl, and chop the herbs. Knead the minced meat with the onion, garlic, eggs, bread rolls, and herbs into a dough. Slice the tomatoes and slice the feta cheese lengthwise. Line a loaf pan with baking paper. Line the bottom with the minced meat mixture, then layer a layer of feta, followed by a layer of tomatoes, leaving the edges free. Fill the edges with the minced meat mixture, and spread the rest of the mixture on top. Make sure the feta and tomatoes are tightly wrapped so the feta doesn’t spill out. Bake in the oven at 220 degrees Celsius (convection oven) for about an hour.
