Meatloaf Italian style

Ingredients for 4 servings:

  • 500 g minced meat
  • 1 roll, stale
  • 1 onion(s)
  • 1 egg(s)
  • salt and pepper
  • basil, shredded
  • 100 g black olives, pitted
  • 100 g dried tomatoes, from the jar
  • 2 garlic cloves, more if desired
  • 250g mozzarella
  • 100 g Parma ham, thinly sliced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

For the meat mixture, place the minced meat in a bowl. Meanwhile, soak the bread roll thoroughly. Finely chop the onion and add it to the minced meat along with the egg. Squeeze out the bread roll and tear it finely, then add it to the minced meat. Knead everything into a formable meat dough and season well. Press it out onto cling film to form a sheet measuring approximately 30 x 20 cm. The sheet should be about 1 cm thick. For the filling, slice the olives and tomatoes. Chop the garlic cloves and dice the mozzarella. Mix well and sprinkle over the meat mixture, leaving a 2 cm border if possible. Carefully roll up the minced meat sheet using the film and place it on a baking sheet. It should not tear. Round off the ends slightly. Preheat the oven to 180°C (top/bottom heat). Meanwhile, place the ham around the roast, ensuring it is completely covered. Then bake the meatloaf for about 30-40 minutes. Using a spatula, transfer the dish to a platter and serve while still hot. Serve with fresh ciabatta or risotto.
