Goulash in the Römer

Ingredients for 4 servings:

  • 600 g goulash (beef or pork or mixed)
  • 400 g onion(s), red
  • 1 bell pepper(s), red
  • 3 tbsp bacon, diced
  • Salt
  • ¼ liter meat broth
  • 2 tbsp flour
  • Paprika powder
  • some lemon(s) – zest, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the bacon cubes, along with the chopped onions and meat pieces. Add everything to a well-watered earthenware pot. Sprinkle the finely chopped paprika over the top and pour in the meat broth. Season with salt, paprika, and lemon zest. Close the earthenware pot and simmer in the oven at 200°C for about 150 minutes. Before serving, thicken the sauce with flour and refine it with butter. Adjust seasoning if desired.
