Elderberry liqueur

Ingredients for 1 servings:

  • 1,200 g elderberries
  • 1 liter of water
  • 2 vanilla pods
  • 1 lemon(s), untreated
  • 750 g sugar
  • 1,400 ml rum, 54%
  • 4 cloves
  • 1 stalk(s) cinnamon

Instructions

Working time approx. 40 minutes; Rest period approx. 30 days; Cooking/baking time approx. 1 hour; Total time approx. 30 days 1 hour 40 minutes

Bring the elderberries to a boil in a saucepan with about 1 liter of water, along with the vanilla pods (slit lengthwise), cloves, and cinnamon. Slice the lemon, add the lemon, cover, and simmer the berries over low heat for about 1 hour. Strain everything through a clean cloth and mix the juice with the sugar. Bring back to a boil. Let cool. Pour in the rum and mix well. Pour the liqueur into clean bottles, seal tightly, and let it steep in a cool, dark place for 4 weeks. It tastes best chilled or on ice.
