Currant Limes

Ingredients for 1 servings:

  • 1 kg currants
  • 320 g sugar
  • 200 ml water
  • 700 ml vodka
  • 100 ml lemon juice

Working time approx. 45 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

makes about 2 liters of currant lime juice

Mix the sugar and water and bring to a boil until the sugar is completely dissolved. Then let it cool again. Pick the currants from the stems and rinse them thoroughly. Then puree them as finely as possible and press them through a sieve that doesn’t let the currant seeds through, but is large enough to retain the finest pulp fibers. If you strain through a little vodka, the puree will slide through the sieve more easily. Now mix the fruit puree with the vodka, lemon juice, and the sugar water and, if necessary, blend again with a hand blender or whisk. Pour the lime juice into clean bottles. You can also use the empty vodka bottle, for example. Then briefly turn it upside down to prevent mold and store it in a cool place. The lime juice should keep in the refrigerator for about 1-2 weeks if it isn’t consumed beforehand. Otherwise, it can easily be frozen in plastic bottles.
