- 480 g wholemeal spelt flour
- 200 g applesauce without added sugar
- 5 apples
- 3 m.-sized egg(s)
- 2 tsp baking powder
- 150 g erythritol (sugar substitute) (Xucker light)
- 50 g walnuts
- 120 ml virgin coconut oil
- 1 pinch of salt
- 2 tsp cinnamon
- n. B. Flavdrops Vanilla

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Peel apples and cut into small pieces. Mix flour, baking powder, cinnamon, Xucker, and salt in a large bowl. Heat coconut oil until liquid, then add to the flour mixture along with the eggs and Flavdrops (I use three droppers) and mix well. The mixture will be quite firm, so don’t be surprised. Roughly chop the walnuts and add them to the mixture along with the apples. The amount of apples may seem too large, but this ensures that the cake is moist and sweet. Transfer everything to a 28 cm springform pan and bake for about 45 minutes. Do the skewer test. Let the cake cool or taste it while it’s still warm. With 8 slices, each slice has a good 200 calories, making it perfectly diet-friendly.
