Moroccan chicken with honey and tomatoes

Ingredients for 4 servings:

  • 1 kg chicken
  • 1 tsp cumin
  • 1 tsp fennel seeds
  • 2 tsp coriander seeds
  • 1 can of tomatoes, chopped
  • 3 garlic cloves
  • 1 piece(s) ginger (walnut-sized)
  • 1 pinch of cinnamon powder
  • 4 tbsp honey
  • 1 onion(s)
  • olive oil
  • chili powder
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 10 minutes

Toast the spices in a pan without fat. Puree the tomatoes, garlic, ginger, and spices. Add the honey and season with salt and chili. Marinate the meat in the sauce for at least 1 hour. Chop the onion and fry it in olive oil. Remove the onion and sear the chicken on both sides. Add the onion and sauce and simmer for at least 30 minutes. Serve with couscous.
