Ingredients for 4 servings:
- 4 lamb shanks
- 1 ½ liters buttermilk
- 100 ml herb curd
- 3 m.-large shallot(s)
- 2 cloves garlic
- 75 g herb mixture, e.g. dill, parsley, chives, celery leaf, chervil, etc.

Wash the lamb shanks, pat dry with kitchen paper, and trim meticulously. Wash and finely chop the herbs. Clean and finely dice the shallots and garlic. Mix these diced herbs and the finely chopped herbs with the remaining ingredients until smooth. Now place the four shanks and the marinade in a sealable container. The meat should now marinate in a cool place for about 48 hours to tenderize.
