Ingredients for 1 servings:
- 5 tbsp olive oil
- 2 tbsp paprika powder
- 1 tsp oregano
- ¼ tsp cumin, more as needed up to 1 tsp.
- ¼ tsp marjoram (more up to 1 tsp)
- 1 tsp, heaped parsley, (flat)
- ½ tsp pepper (white)
- ¼ tsp salt
- 2 small garlic cloves (squeezed)
- 1 small lemon(s) (juiced)
- 2 large onions (grated)
- 1 onion(s), for frying

Recipe from Samos – also very suitable as a barbecue marinade (e.g. Souvlaki, Bifteki etc.)
This marinade is for 500g of thinly sliced meat (e.g., schnitzel, turkey, etc.). Combine all ingredients in a bowl and mix well. Then place the thinly sliced meat (e.g., schnitzel) in a bowl, spread the marinade over it, and refrigerate overnight. The marinade can be adjusted to taste (even just before cooking)! The next day, fry the marinated meat with a sliced onion until crispy, and serve with rice noodles and tzatziki. Alternatively, you can use it later, as in my “Gyros Baked” recipe.
