Quick kale stew

Ingredients for 4 servings:

  • 1 jar kale, 420 g drained weight
  • 7 m.-sized potatoes
  • 2 m.-sized sweet potatoes
  • 2 large onions, white
  • 4 smoked Mettwurst sausages
  • some butter
  • some salt and pepper
  • 350 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Kale from a jar with sweet potatoes and Mettwurst

Prepare a large pot. Boil approximately 350–500 ml of water in the kettle. Peel and roughly dice the potatoes and sweet potatoes. Roughly chop the onions. Melt the butter in the pot and fry the onions until lightly browned. Place the kale from the jar into a sieve and rinse briefly with cold water. Add the potatoes and sweet potatoes to the onions and fry briefly. Add the kale and pour in the hot water until at least 3/4 of the water is covered. Sprinkle with salt and pepper. Place the Mettwurst sausages on the cabbage and simmer on low heat with the lid closed for at least 25 minutes. Turn the sausages once. I chop the sausages into small pieces afterwards and mash the potatoes and sweet potatoes a little to make it more creamy. If desired, spread a little mustard on the sausage pieces. Since kale from the jar is usually already salted, use salt sparingly. In addition, kale from a jar is usually a bit sour – here the sweet potato is a wonderful counterpoint.
