Turkey in the classic style

Ingredients for 6 servings:

  • 1 small turkey
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp paprika powder, sweet
  • 2 large onions
  • 2 large apples
  • 1 cup of cream
  • n. B. water
  • possibly flour or sauce thickener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 15 minutes

Wash the turkey and pat dry. Then rub salt, pepper, and paprika powder inside and out. Now stuff with the peeled and finely chopped onions. Core and finely chop the apples and add them to the turkey. Then tie the feet together. Place breast-side down in a roasting tin. Pour on a little water. Then roast in a preheated oven at 190°C (fan oven) for about 3 hours. Baste with the meat juices occasionally. Turn over after 2 hours and then remove the lid 20 minutes before the end of the cooking time to allow the turkey to crisp up. At the end of the cooking time, remove the turkey from the roasting tin and pour the stock through a sieve. Refine with cream and thicken if desired. I recommend broccoli and potatoes as a side dish.
