Ingredients for 4 servings:
- 6 chops
- 200 ml white wine
- 200 ml wine vinegar
- 1 onion(s)
- 1 carrot(s)
- 1 bay leaf
- 1 pinch(s) thyme
- 1 pinch of salt
- 1 pinch(s) of pepper
- 400 ml meat broth
- 1 cup sour cream
- 1 tsp cornstarch
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 45 minutes; Total time approx. 13 hours 5 minutes
Cooking time is approximately 45 minutes. The chops are marinated the night before in a mixture of white wine, wine vinegar, onions, carrots, thyme, pepper, and salt. The next day, remove them from the marinade, dry them thoroughly, and lightly salt them. They are fried in smoking-hot fat for about 5 minutes on each side until golden brown. Then, reduce the heat to low and let the meat simmer for 15 minutes until tender. Then, transfer it to a hot bowl and keep warm. Saute the drained onions and carrots in the frying fat. Pour the marinade over them and cook until the marinade has evaporated. Then, add the meat broth and sour cream and simmer on low heat for 7-8 minutes. Thicken the sauce with a little cornstarch dissolved in water and strain it through a fine sieve. Now, pour the sauce over the chops. 45 kcal per serving.
