Ingredients for 2 servings:
- 2 salmon fillets (150 g each)
- 125 g couscous, instant
- 175 ml vegetable stock
- 200 g spinach (spiced spinach), frozen
- 100 g sheep’s cheese
- ½ tsp cumin
- ½ tsp curry powder

Wash the salmon fillet, pat dry, and season with salt and pepper. Defrost the spinach according to the package instructions. Bring the vegetable broth to a boil in a saucepan and season with cumin and curry. Then add the couscous to the broth and let it swell for a few minutes. Spread out two pieces of baking paper (each approximately 40 x 30 cm, or slightly smaller than a baking sheet) and place the couscous in the center of each. Place the salmon on top and cover with spinach. Top with strips of feta cheese. Seal the baking paper over it and twist it like a candy or fold it like a present, stapling it if necessary. Bake at 200°C for approximately 20 minutes.
