Poached young pork in a coat of herbs

Ingredients for 4 servings:

  • 800 g roast pork (young pork loin roast, pork loin)
  • 50 g freshly chopped herbs (anything the garden can provide)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the meat and remove any sinew. Rub well with salt and pepper, then toss in the finely chopped herbs. Wrap the meat in cling film and then tightly in aluminum foil; I make a candy out of it. Place the wrapped meat in a pot of boiling water, bring to a boil, and simmer gently for 25 minutes. Remove from the pot and place the candy on a plate in a preheated oven at 200 degrees Celsius for 20 minutes. Remove from the film and serve sliced. Serve with steamed vegetables, buttered potatoes, or just fresh bread. Unfortunately, this method of preparation doesn’t really produce a sauce, so you either make your own or use a bag.
