Spelt bread with malt beer and yeast

Ingredients for 1 servings:

  • 400 ml malt beer
  • 1 tsp, heaped salt
  • 1 tsp bread spice mix
  • 250 g spelt flour type 630
  • 250 g wholemeal spelled flour type 1050
  • 2 tbsp oat flakes
  • 2 tbsp flaxseed
  • 2 tbsp durum wheat semolina
  • 10 g fresh yeast

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 hours 30 minutes; Total time approx. 3 hours 45 minutes

for the bread maker

Pour malt beer, salt, and bread spice into the bread maker’s (BBA) pan. Add the flour and the remaining dry ingredients. Crumble the yeast over the bread, making sure the yeast doesn’t come into contact with the liquid. Set the BBA to the program for wholemeal bread (1000 g, dark crust). The bread tastes a bit sweet, but that’s precisely why it pairs perfectly with savory spreads.
