Spicy Kaiserschmarrn with ham and onions

Ingredients for 1 servings:

  • ½ onion(s), red
  • 1 tsp rapeseed oil
  • 20 g diced ham
  • 1 egg yolk
  • 1 pinch of salt
  • 75 ml milk
  • 65 g flour, type 1050
  • 25 g Cheddar cheese
  • 1 tbsp chives, frozen or fresh
  • 1 egg white
  • 10 g butter
  • black pepper, freshly ground

Peel and dice the onion, and sauté in oil over low heat until translucent. Add the ham, reduce the heat to low, and keep the onions and ham warm. Separate the egg, pour the egg white into a mixing bowl, and refrigerate. Beat the egg yolk in a bowl with the salt until creamy. Alternately add the milk and flour and stir until a smooth batter forms. Roughly grate the cheese over the batter, add the chives, and fold into the batter. Whisk the egg whites in a mixing bowl until stiff peaks form and fold into the batter. Season the batter with salt if desired; it should be hearty. Heat the butter in a large frying pan, add the batter, and fry until golden brown on both sides. Slide the pancake onto a large plate and break it into bite-sized pieces using two forks. (My pan doesn’t like it when I do this in it.) Return the Schmarrn to the pan and fold in the onion and ham mixture. If you like, add a little pepper to taste. Arrange the Schmarrn on a plate, sprinkle with fresh chives, and serve. Serve with a fresh salad or a cream cheese dip. The dish contains approximately 615 kcal per serving.
