Strawberry iced tea jam

Ingredients for 5 servings:

  • 900 g strawberries
  • 300 ml tea, cold peppermint tea
  • 8 tbsp instant tea powder, lemon
  • 500 g gelling sugar, 2:1

Working time approx. 35 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 39 minutes

deliciously refreshing with mint

Wash, hull, and chop the strawberries thoroughly. Dissolve the instant tea powder in the tea and add it to a saucepan along with the strawberry pieces. Puree if desired. Add the gelling sugar and mix well. Bring the fruit to a boil while stirring. Boil gently for 3-4 minutes, depending on the sugar package instructions. Remove the pan from the heat. Skim off any excess foam from the jam, then pour into hot, rinsed jars and seal. Let stand upside down on a kitchen towel for about 5 minutes. My tip: Since I usually make my tea with fresh mint from the garden, I chop the leaves finely after brewing the tea and add them to the boiling jam; this intensifies the mint flavor. Makes about 5 jars of 400ml each. The jam will keep for about 12 months.
