Mango-strawberry jam

Ingredients for 4 servings:

  • 500 g mango(s)
  • 500 g strawberries
  • 500 g gelling sugar 2:1
  • 75 ml lemon juice
  • 75 ml water
  • 2 packets of vanilla sugar

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the mangos and washed strawberries into cubes approximately 1.5 x 1.5 cm. Bring the fruit to a simmer in a saucepan with lemon juice and water. Cook until the fruit softens. Then puree everything with a hand blender until smooth. Add the gelling sugar and vanilla sugar and bring to a boil according to the gelling sugar package instructions. Pour the jam into washed and boiled jars with twist-off caps and then turn upside down for five minutes. This makes four 250-300 ml jars.
