Dandelion honey

Ingredients for 1 servings:

  • 200 g dandelion flowers
  • ½ liter of water
  • 1 kg sugar
  • 1 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the blossoms in the water for about 15 minutes. Meanwhile, toast the sugar in a dry pan until light brown, then add the lemon juice and strain in the dandelion juice. Now reduce the honey until thickened. The faster you reach the desired thickness, the better the flavor will be preserved. So, use a large pan or reduce the amount in small batches. Pour into jars or bottles and seal tightly.
