Spicy leg of lamb with honey

Ingredients for 6 servings:

  • 2 kg leg of lamb
  • salt and pepper
  • 50 g butter
  • ½ tsp ginger, freshly grated
  • 1 garlic clove(s), squeezed (optional)
  • 300 ml dry apple wine
  • 4 tbsp honey
  • 1 tbsp rosemary, dried
  • 1 tbsp sauce thickener

Working time approx. 15 minutes; Cooking/baking time approx. 6 hours 20 minutes; Total time approx. 6 hours 35 minutes

This dish is designed for a 5.5 to 6.5 liter CrockPot (CP). Rub the leg of lamb well with salt and pepper and sear on all sides in a pan over moderate heat. Don’t let the butter get too hot, as otherwise it can quickly turn dark and bitter. Add the leg of lamb to the CP. In the same pan, sauté the ginger and garlic briefly and then deglaze with the apple cider. Remove the pan from the heat and stir in the honey. Pour everything over the leg of lamb and then sprinkle the meat with the rosemary. Cover. Braising time is approximately 6 hours on high. Then keep the leg of lamb warm and thicken the sauce with a little sauce thickener.
