Kid on red cabbage

Ingredients for 3 servings:

  • 1.2 kg goat meat (kid leg)
  • 1 small head of red cabbage
  • 1 ½ salted lemons
  • 2 tbsp spice mix (Zaatar)
  • 50 ml olive oil
  • 1 salted lemon(s) for the leg

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 3 hours 40 minutes

Preheat the oven to 180°C (top/bottom heat). Shred the red cabbage. Dice the salted lemons and mix them into the red cabbage. Knead everything thoroughly and let it rest for at least 1.5 hours. Mix the oil with the za’atar and rub it all over the leg on both sides. Place the cabbage in a deep roasting pan. Pour the oil over it and place the leg on top. Braise, uncovered, for about 1 hour in the preheated oven. Slice the salted lemons. Turn the leg over and top with the lemon slices. Roast uncovered for another 30 minutes. Test with a skewer.
