Ingredients for 4 servings:

  • 2 bell peppers, red and yellow
  • 2 large zucchini
  • 5 large potatoes
  • 3 carrots
  • 1 can of corn
  • 1 can kidney beans
  • 1 large onion(s)
  • Spice mix for chili con carne
  • some vegetable stock, granulated
  • 1 cup of cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the vegetables (peppers, zucchini, carrots) and potatoes into small pieces. It’s best to choose the right size pieces so they cook at the same time. Finely chop the onion and sauté in olive oil. Then add the vegetables. Pour in 1/4 to 1/2 liter of water. When it starts to boil, add the vegetable stock, corn, and kidney beans. After 10 minutes, add the spices and cream and continue cooking until everything is tender.
