Rice with tomato paste and corn

Ingredients for 2 servings:

  • 1 cup of rice
  • 1 can of corn
  • 2 tbsp, heaped tomato paste
  • 1 onion(s)
  • Salt
  • pepper
  • oregano
  • Garlic powder or chopped cloves
  • Paprika powder, sweet
  • 50 ml whipped cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Boil rice with water and a little salt. Meanwhile, finely chop the onion and sauté it in a little oil. Add the onions with pepper, salt, garlic, and paprika to taste, and mix with the onions. Then add the canned corn and let it warm up a bit. Add 2 tablespoons of tomato paste and mix everything together. Taste again and adjust the seasoning if necessary. When the rice is done, let it cool briefly and set aside. I thinned the tomato paste sauce with 50 ml of heavy cream, but this isn’t necessary. Add the rice to the sauce and mix everything together.
