Fried vegetable rice

Ingredients for 2 servings:

  • 200 g rice, cooked
  • 1 tbsp butter
  • 100 g mushrooms
  • 1 bunch of spring onions
  • 150 g broccoli or cauliflower
  • 1 tsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Quarter the mushrooms. Clean the vegetables and cut into equal-sized pieces. Cook in boiling salted water until al dente. Heat the butter in a pan and sauté the mushrooms with the parsley. Then add the vegetables and rice and sauté. Season with salt and pepper and serve immediately.
