Ingredients for 2 servings:
- 1 cup lentils (plate)
- 1 onion(s)
- 4 carrots
- 1 can coconut milk
- Curry paste, red
- Salt
- curry powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
Cook the lentils without salt for 45 minutes until tender. Finely chop the onions and carrots and sauté them in a pan with curry powder. Add the cooked lentils and coconut milk. Season to taste with salt and red curry paste.
