Ingredients for 1 servings:

  • 1 kg chestnut(s)
  • 750 g gelling sugar
  • 1 lemon(s)
  • 1 cm ginger root

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 58 minutes

Place fresh, large chestnuts in boiling water, just enough to cover the chestnuts. Boil for 10 minutes, then peel off the skin and peel. Peeling takes about 15 minutes. Bring the peeled chestnuts to a boil with about 800 ml of water, the lemon juice, grated lemon zest, and finely diced ginger, and simmer for 4 minutes. Purée with a hand blender and bring to a boil with the 2:1 preserving sugar. Pour into jars. Makes 5-6 jars of jam.
