Baked tomatoes

Ingredients for 4 servings:

  • 4 large tomatoes, firm
  • Salt
  • 3 tbsp olive oil
  • 1 onion(s)
  • 100 g breadcrumbs
  • 3 garlic cloves
  • 4 tbsp basil, finely chopped
  • 90 g Parmesan, grated
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat oven to 220°C and lightly grease a baking dish. Halve the tomatoes, lightly salt the cut side, and let them drain slightly on kitchen paper with the cut side down. Finely dice the onion. Heat the olive oil in a pan, add the onion, and sauté until translucent. Add the breadcrumbs and fry briefly. Remove the pan from the heat, crush the garlic, and stir in along with the basil and Parmesan. Place the tomatoes cut-side up in the baking dish. Spread the breadcrumbs and cheese mixture over the tomatoes. If desired, add a knob of butter to each half and bake the tomatoes for 15-20 minutes.
