Ingredients for 4 servings:

  • 8 egg yolks
  • 4 tbsp milk
  • 8 egg whites
  • 20 g butter or margarine
  • 1 bell pepper(s), green
  • 1 bell pepper(s), yellow
  • 2 bell peppers, red
  • 200 g salami or hunting sausage
  • 20 g butter or margarine
  • salt and pepper
  • marjoram
  • garlic powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

a simple omelet for every season and time of day

Halve the peppers, remove the white parts and seeds, and cut the peppers and sausage into strips. Heat the butter or margarine in a pan and sauté the pepper strips for about five minutes. Tip: Sauté the peppers only briefly to preserve the vitamins. Add the sausage strips and spices and fry everything for about two more minutes, season to taste, and keep warm. Whisk the egg yolk with the milk and salt. Beat the egg whites until stiff and fold into the egg yolk mixture. Heat the butter or margarine in a pan and fry four omelets one after the other. Spoon the sausage mixture onto each omelet and fold one side over.
