Fried kohlrabi

Ingredients for 2 servings:

  • 1 kohlrabi, approx. 500 g
  • 1 spring onion(s), possibly two
  • 50g bacon
  • 1 tbsp, heaped margarine or butter for frying
  • Salt and pepper, white, freshly ground
  • Nutmeg, freshly grated
  • 4 eggs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the kohlrabi and cut into small cubes. Trim the spring onions and slice into rings. Cut the bacon strips into smaller pieces. Heat margarine or butter in a pan, add the kohlrabi cubes, and fry for about 10 minutes, stirring frequently. Once browned, season with pepper, nutmeg, and a little salt. Add the spring onions and bacon, stir in, and continue frying. Melt some margarine in a second pan. Crack the eggs into the pan, fry, stir briefly, and season with salt and pepper. Season the kohlrabi to taste and add more seasoning if desired. Serve the fried kohlrabi with the scrambled eggs.
