Cucumber relish with peanuts

Ingredients for 4 servings:

  • 1 cucumber(s), organic
  • 100 ml water
  • 4 tbsp vinegar
  • 50 g cane sugar
  • 1 pinch(s) of piri-piri
  • 50 g peanuts, roasted and salted
  • 1 tsp fish sauce

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Sweet and fresh, delicious with grilled food or curry

Wash the cucumber thoroughly, halve it lengthwise, and scrape out the seeds with a small spoon. Cut the cucumber halves lengthwise into strips, and then cut the strips crosswise into thin cubes. Roast and salt the peanuts yourself or chop canned ones. This works well with a knife or a chopper. Bring the water, sugar, and vinegar to a boil briefly, stirring to dissolve the sugar. Allow to cool, then mix with the fish sauce. Mix the cucumbers with the chopped peanuts, the sauce, and a good pinch of piri-piri. Leave to stand in the refrigerator for a while to allow the flavors to disperse. Very simple, but truly delicious with its combination of spiciness, sweetness, softness, and crunch.
