Potato salad Mobschatzer style

Ingredients for 10 servings:

  • 2 kg potato(s), waxy
  • 800 g meat salad
  • 400 g gherkins
  • 50 ml cucumber juice
  • 250 g herring fillet(s)
  • 4 m.-sized apples
  • 4 onions
  • 6 eggs

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours

Boil the potatoes unpeeled, then let them cool slightly. Peel them while they are still warm, then let them cool. In the meantime, peel and core the apples and cut them into small cubes, just like the gherkins. Peel and finely chop the onions. Cut the herring into small pieces. Once the potatoes have cooled, thinly slice them. Place the potato slices in layers in a bowl and top each layer with salt and pepper, then layer with the cucumbers, apples, onions, and herring in equal parts. Repeat this process until all the ingredients are used up. Then add the meat salad and mix well. Mix everything thoroughly, season to taste, and add more seasoning if desired. Finally, add the pickle juice, mix well, and adjust the consistency to your liking. The eggs can be hard-boiled and halved or quartered to serve as a garnish. Cover and let the mixture sit in a cool place for about two hours.
