Ingredients for 4 servings:

  • 300 g salted herring(s) (herring fillets)
  • 125 g sausage (hunting sausage)
  • 125g salami
  • 4 eggs
  • 3 gherkins
  • 1 small onion(s)
  • ½ apple
  • 3 tbsp mayonnaise
  • Pepper from the mill

Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes

Family recipe from East Prussia

Rinse the herring under running water, pat dry, and cut into small cubes. Cut the sausage, salami, eggs, cucumber, and apple into very small cubes (less than 0.5 cm if possible) and place everything in a bowl. The finer the diced ingredients, the better the flavor. Grate the onion and add it. Fold in the mayonnaise, season with fresh pepper, and mix well. Important: Leave to rest in the refrigerator for at least 12 hours before eating. This is the only way the ingredients will combine to achieve their final flavor. Garnish with egg and cucumber and serve with fresh baguette. Even if you wouldn’t really expect salami and sausage in a salad like this, give it a try; it tastes really delicious. The recipe comes from my grandmother, and I’ve been using it unchanged for many years.
