Ingredients for 1 servings:

  • 200 ml milk (oat milk)
  • 50 ml water
  • 3 tsp, heaped psyllium husks, ground
  • 50 g cashew nuts
  • 1 tbsp lemon juice
  • ½ tsp salt

Finely grind the cashews. Add the water and oat milk and blend until smooth. Then add 2 teaspoons of ground psyllium husk, the lemon juice, and the salt, and blend well for at least 2 minutes. Over time, it should form a “slimy” mixture, which will take some time. If the mixture remains too runny, gradually add the rest of the psyllium husk. Transfer to a small bowl and let it rest for two to three hours. The “mozzarella” is then ready.
