Spaghetti with lemon and arugula

Ingredients for 4 servings:

  • 400g spaghetti
  • 100 g arugula
  • 60 g Parmesan
  • 5 tbsp olive oil
  • 1 garlic clove(s)
  • 1 chili pepper(s)
  • 1 tsp lemon peel, untreated
  • Salt and pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

A light summer dish

Cook the pasta until al dente and drain. Finely slice the arugula and mix it with the lemon zest, the squeezed garlic clove, the finely chopped chili pepper, olive oil, and 40g of grated Parmesan cheese in a large bowl. Then add the pasta and mix well. Sprinkle with the remaining Parmesan cheese and season with salt and black pepper.
