Spicy bread casserole

Ingredients for 3 servings:

  • 8 slice(s) toast bread, more depending on the baking dish
  • 500 g tomatoes, ripe
  • 200 g cheese, spicy, sliced
  • 4 eggs
  • 50 g Parmesan, grated
  • oregano
  • Thyme
  • rosemary
  • Milk
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Good use of leftovers – simple and tasty!

Pour milk over the slices of toast in a bowl to allow them to absorb the milk. In the meantime, thinly slice the tomatoes and whisk the eggs with the Parmesan cheese in a bowl. Remove the slices of toast from the milk and place the first layer in a baking dish. Place the tomato slices on top, making sure everything is covered. Season the tomatoes with salt and pepper and sprinkle with the herbs. Place cheese on top of the tomatoes, then more toast, tomatoes, cheese, etc. Finish with tomatoes. Finally, pour the egg/cheese mixture over the casserole and pierce the casserole several times with a fork to ensure the egg mixture is evenly distributed. Bake in a preheated oven at 180 degrees Celsius (convection oven) for about 35 minutes.
