Zucchini and carrot noodles

Ingredients for 4 servings:

  • 500g spaghetti
  • 2 zucchinis
  • 4 carrots
  • 1 onion(s)
  • 400 ml vegetable stock
  • orange juice
  • curry powder
  • salt and pepper
  • sour cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Delicious vegetarian pasta dish

Cook the noodles until tender. Finely grate the zucchini and carrots, and dice the onion. Heat the oil in a deep pan or wok, sauté the onion until translucent, then sauté the carrots for about 3 minutes and dust with about 2 tablespoons of curry powder. Now add the vegetable stock, orange juice, and zucchini and simmer until the vegetables are soft enough. I only simmer it briefly. Season everything with salt, pepper, and curry powder. Stir in the cooked spaghetti and let it marinate for a while. If desired, you can also stir in sour cream. It tastes even better the next day.
