Ingredients for 6 servings:
- 1 kg goulash, mixed
- 1 large onion(s)
- 2 garlic cloves
- 4 carrots
- 3 tsp thyme, dried
- some oil
- salt and pepper
- ½ tbsp tomato paste
- 2 cans of tomatoes, chunky, 425 ml each
- 2 cans of white beans, 425 ml each
- 1 liter vegetable broth
- 200 g feta cheese
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 15 minutes
Dice the onion and finely chop the garlic. Slice the carrots. Heat the oil in a large pot/pan and brown the meat vigorously, seasoning with salt and pepper. Briefly fry the onion, garlic, carrots, and thyme. Stir in the tomato paste and tomatoes, add the stock, and bring to a boil. Add the drained beans and season with salt and pepper. Transfer everything to a large ovenproof dish, cover, and cook in a preheated oven at 200°C for about 1 hour 45 minutes. Sprinkle the oven-baked goulash with feta and serve with bread.
